Anti-Ageing Recipe: Spinach, Roasted Sweet Potato, and Red Capsicum Salad
- Step 1. Slice sweet potato into 6cm cubes.
- Step 2. Slice your capsicum into strips around 10cms long and 2cm wide.
- Step 3. Pop both the capsicum and sweet potato into a baking tray and drizzle with olive oil and a pinch of salt.
- Step 4. Put them in the oven at around 180 degrees Celsius and roast for around 30 minutes. By this time the sweet potato should have caramelised on the edges and be soft on the inside. The red capsicum will be soft with loosened skin and in some areas a little blackened
- Step 5. Wait for the capsicum to cool and then peel the skin off using a fork (you don’t want to keep the skin on the capsicum because it becomes bitter and chewy).
- Step 6. Add your roasted sweet potato and capsicum to your leaves.
- Step 7. Slice half an avocado and add this to your salad.
- Step 8. Add in some roasted pine nuts or pumpkin seeds and dress with olive oil and balsamic vinegar or for the ultimate indulgence create an avocado dressing with avocado, lemon juice, garlic and olive oil whipped up.
